Today we are going to make a cake with dates recipe. The more interesting is that we are going to bake it without using the oven. You can use the normal stove that you have in your house. We are going to mix something healthy and delicious.  Dates have many health benefits, such as being high in fiber, and getting enough fiber is essential for one’s overall health. It is high in disease-fighting antioxidants which means it lowers your risk to get sick. It improves your immunity and brain health. Furthermore,  it also improves your digestive system, strengthens your bones, and last but not least is a natural sweetener.

Cake with Dates Recipe

The ingredients needed are dates, milk, sugar, flour, eggs, oil, baking powder, baking soda, and lastly Cashew nuts. The following are the ingredients added to the recipe.

  • Dates 1 cup
  • Milk ⅓ cup
  • Sugar ⅓ cup
  • Flour 1 cup
  • Eggs 2
  • Oil ¼ cup
  • Baking powder 1 teaspoon
  • Baking soda ½ teaspoon
  • Cashew nuts 3 tablespoon

Recipe

Take the dates and wash them thoroughly. Then, remove its seed and put it in a bowl. Add milk into it and mix it well. Now, let it soak for about 15 to 20 minutes. After, take a grinder, grind the dates with milk for about 2 minutes, and make a puree of it. After 2 minutes, take the puree out of the grinder and put it in a bowl.

Cake with Dates Recipe continue – Take ⅓ cup of sugar, put it in a pan, and add 1 tablespoon of water to it. Now, heat it on low flame until it caramelized. When it is caramelized then add ¼ cup of water to make it less viscous. Add the caramel into the date puree and mix it well using a spatula until it unifies with it. Now, Take a cup and break two eggs in it. Beat them using an electric beater for 1 minute.

Then add ¼ cup of oil and beat again for some time. Sprinkle 3 tablespoons of sugar into it and again beat it with an electric beater for about 2 minutes until it’s nice and fluffy. Both the caramel and date puree should be mixed with eggs and stir it well. Take the cashew nuts, chop them into small pieces, and roast them in a nonstick pan on a low flame.

Cake with Dates Recipe continue – Now add the roasted Cashew nuts into the mixture and mix it with a spatula. Now take the seiver and place it in a bowl with all the ingredients in it. Pour the flour into the seiver, add 1 teaspoon of baking powder, and ½ teaspoon of baking soda into the flour. Now sieve the flour intermittently while continuously stirring the mixture so that it doesn’t make lumps. When all the flour is added then give the mixture a nice mix until it unifies and has a nice texture to it.

Now take a 6 inches mould and Grease it with some oil using a brush. Place the baking paper in the mold and again grease it so that the cake doesn’t stick to it.

Now pour the batter into the mold and tap the mould onto the shelf so that all the air trapped inside escapes. Take a pan, place it on the stove and preheat it for about 15 minutes. Place a stand in the pan for placing the mould. Now put the mould on the Stand and cover the pan with a lid. Now set the heat to low medium and bake it for about 35 to 40 minutes. For the oven Preheat it for 15 minutes and bake it at 180 ° C for 35 minutes.

After 35 minutes, pick a toothpick and chew it to the end to see if it is fully cooked. If the toothpick comes out clean then your cake is done and if it doesn’t come out clean and there is better on it then bake it for another 15 minutes. When the cake is done take the mold out and let it cool for 10 minutes. After ten minutes, scrape the sides of the cake using a knife and take the cake out on the plate. Remove the baking paper from the bottom layer of the cake. Take it out and serve with tea.

Cake with Dates Recipe Frosting

We didn’t use any frosting on it. As the cake is simple and not for occasions. But if you want to decorate it then you can take almonds, and cashew nuts, and chop them into thin slices. Roast it on low heat. After pouring the batter into the mould, you can put the almonds and cashew nuts that you roasted on top of it and then bake it.
